Just like “rougail saucisses”, the “zambrocal” is typical reunionese dish. And you can find many ways to cook it : as a side dish or as main dish with diced bacon, peas … my grand mother even put some salt cod in it.

Here is our recipe, as a main dish and very easy to cook !

Ingredients (for 8 people)
Rice
1kg of smoked sausages
5 potatoes
2 big cans of red beans
3 onions
1 garlic
Thyme, curcumaFirst prick the sausages with a fork and boil them for 15 minutes
Slice the potatoes and chop the onions and the garlic
Put the onions, garlic, thyme and curcuma in the pot with some oil
Add the red beans (without removing the water), let it cook for 10 min
Meanwhile, wash the rice and slice the sausages
After removing the water, put the rice with just a little bit of oil in a big pot
Add the red beans, then the sausages and the potatoes
Mix everything, cover the pot and let it cook for 30 minutes on a medium heat
It’s ready, bon appétit ! Serve it with a good “peanut rougail”
